Super Easy Ube Ice Cream

It’s parent confession time: Have you ever sneaked veggies like zucchini or carrots into a bread recipe or black beans into brownies to expand your little ones’ palates?

At Joy, we love to think outside the box when it comes to family-friendly recipes that incorporate ice cream cones and other unexpected foods and flavors. Today, we’re bringing your kiddos a treat they likely haven’t had before.

Enter ube ice cream.

Ube is a sweet purple Japanese yam that food bloggers and adventurous eaters around the world use to transform their dishes into a purple hue that’s straight out of a dream. These concoctions — with their cool, surreal colors — aren’t just highly Instagrammable; they taste amazing too. We’ve heard the flavor described as a blend of pistachio and vanilla, or white chocolate, but we’d like you and your little taste-testers to be the judges of that.

You can take your kiddos on a trip to your local Asian market to find frozen grated ube to whip into a made-from-scratch ube ice cream. For simplicity’s sake (life’s busy, right?) we opted to use an ube extract instead, giving us the same gorgeous look and sweet, creamy flavor. Find the extract through popular spice companies, through your local Asian market, or online.

Use the opportunity to educate your young ones about new foods, different cultures, and how unexpected items like yams can turn into great desserts. Whatever you do, enjoy the dreamy purple ice cream with your favorite Joy Cone and turn the little moment into a lasting memory.

What You’ll Need:

  • 1 14-ounce can sweetened condensed milk
  • 1 teaspoon ube flavoring
  • 2 cups heavy cream
  • Joy Sugar Cones (or your favorite Joy product)

What To Do:

  1. In a large bowl, combine sweetened condensed milk with ube flavoring.
  2. In a second large bowl, whip two cups of heavy cream until stiff peaks form. Add ⅓ of whipped cream into ube mixture until incorporated, then fold in the leftover whipped cream.
  3. Transfer the mixture to a 4 ½ x 8 ½-inch loaf pan. Cover tightly with plastic wrap and freeze until firm, at least 12 hours.
  4. Serve with your favorite Joy Cones!
